1. You Must Try This Recipe:
I swear, I’m going to stop talking about my Instant Pot soon. It just keeps showing up because it’s been so helpful to me lately in getting tasty, healthy dinners on the table quickly. I found this recipe via a Facebook group and it’s one of the best things we’ve eaten lately. The whole family, even my two year old, loved it and it really was ready after only 5 minutes under pressure (probably about 15 minutes total with minimal prep).
If you have an Instant Pot, I highly suggest giving this one a shot this week: 5 Minute Shrimp Scampi Paella.
We served ours with a grilled nectarine and burrata salad to up the nutrition quotient and get some much-needed veggies added in there. Any side salad will do!
2. A Case for Drinking More:
My week sure is looking up after I found out that I’m actually benefitting my health via (semi) nightly glasses of wine. Of course, the caveat is that you must also be working out 2-3 hours a week. Since I know many parents are also striving to do that as a key form of stress relief, I think we can all feel good about the glass of wine we might be having tonight.

3. And If You’ve Managed to Open too Much Wine:
Freeze it! I’ve seen this tip floating around lately and though each time I think “who has extra wine?”, I do know that there are times where a bottle is going to pass it’s prime before we finish it. I love this because it can be a great way to make a flavorful sauce (hello pasta sauce) without opening a whole bottle, plus wine slushies! Need I say more?
