Energy bites. No-bake cake batter balls. Cake truffles. Call them what you like, but these healthy birthday cake balls are a great naturally sweet, easy treat for kids and adults alike.
We love making treats like these that are packed with:
- Healthy fats from cashew butter
- Fiber from oats
- Naturally sweet dates
- Fun sprinkles!
Ok, the sprinkles don’t serve any nutritional purpose, but they do make these fun and festive!
Cake Balls = Energy Bites
Have you and your kids tried energy bites yet? They are fantastic, nutrition-packed treat that’s both sweet and nourishing. I love having them on hand for emergency energy crashes (for me and the kids). They’re also a wonderful non-candy treat for after meals.
We also love to make a smaller version of these cake balls or other energy bites to put in the “treat” spot of the Bentgo Kids Lunch Box. (this is an affiliate link)
Here are some of my favorite energy bite recipes:
And, of course, these Healthy Birthday Cake Balls which we’ve already demolished two batches of.
Healthy Birthday Cake Ball Recipe
Ready to make it? I bet you already have everything you need!
Except maybe cashew butter…
You can always substitute with a nut butter, just be aware that we chose cashew butter for it’s relatively neutral flavor.
Also, I know you’ll probably ask: “why the melted butter?”
Many cake batter recipes use butter flavoring. Instead of using an artificial flavoring, I realized we could just melt some high-quality butter (we love Kerrygold) and let it do its natural flavor and healthy fat thing. Of course, if you’re vegan or can’t have dairy a bit of butter flavoring extract would be a fine substitute and shouldn’t affect the recipe.”
Ingredients
- 10 dates
- 1 cup cashew butter
- 1 Tbsp butter
- 1 tsp vanilla
- 1/4 tsp sea salt
- 1 cup rolled oats
- 1 cup sprinkles
Instructions
- Pit dates and soak in warm water 5 minutes. Remove the dates from the water and keep water (just in case you need it for extra softening).
- Meanwhile, melt the butter and get out your food processor.
- In food processor: blend together dates, cashew butter, melted butter, vanilla, and sea salt. Blend until smooth. Add oats and blend until oats are mostly processed and the mixture is forming into a ball inside the processor.
- Lay sprinkles out on a flat plate or tray.
- Take 1 Tbsp portions of date-oat mixture and roll into a ball. Roll in sprinkles to coat.
